All of your comments are accurate. Your OE tires are 28.95'' tall and the 265/75R16 are 31.65'' tall. If you make the change on a late model truck it will effect the trans., ABS, and as well possibly the fuel/air intake mix ratio. I have not heard that anything changed with the '97's where they can't change the programing of the on board computer and re-calibrate for the new tire diameter, so you should still be able to get this done. You may be able to get away with a 225/75R16, OD = 29.3'' if you dont mind going with a tire 10mm narrower to get a real All Terrain type tire. Check with a reputable tire dealer in your area or call the Tire Rack ( tirerack.com ). For a good tire choice once you science out the size you need check out the Dunlop Tire web site, I've had great expirience with their light truck tires, Rover A/T OWL and Rover RV.
