Tires for 89 Nissan Pickup?

Anybody have any reccomendations for tires for an 89 Nissan 4x4?
BFG, Goodyear, Yokohama? What's a good solid tire that will handle offroad conditions but still handle reasonably well on highway/city driving. I'm not looking for major off-road tires, not a Mud type, more of an All-Terrain.
If I upsize a little (to 31x10.50 from standard), how much will my MPG change?
