How to match a tire to a wheel/rim - HELP

I have tires that say "P215/75R14" on my 95' Nissan Pickup. What does that number mean? What size of rim/wheel can I put on it? The wheels I've been looking at are rated like 14 x 7, 15 x 8 ... what does this mean? I guess the 14" diameter is the size I should use, but how do I know if my tire will fit on a given wheel.
I looked on the factory rims and they say 14 x 5, but I can't find any real wheels that size.

How can I add some decent wheels to my Nissan? What size should I get?
