Lexus E300: Is Pirelli P600 "H" M&S okay?

I recently purchased a pre-owned Lexus ES300. It has two badly worn and one slightly
worn OEM (Dunlop SP80 V-rated)tires. In addition, it has one Pirelli P600 M&S H-rated
tire that appears to be brand new.

A recommended tire dealer has suggested that I purchase 3 Pirellis to make a full set.
However, I am concerned since the manual says I need a V-rated tire (205/65 15 94V).

Certainly purchasing three tires is cheaper than replacing all four. However, what will
I give up by not purchasing V-rated tires? Will the Pirelli's perform well enough for my
New Jersey commute? Will I notice a difference between the P600 and other tires (P6000
SportVeloce, Dunlop SP4000, Michelin, etc.)?

Any advice is appreciated...
