For years I used BFGoodrich All Terrain Radials on my Explorer and loved them. My Subaru uses 205/70R15 which does not seem to be an AT size. We love unpaved roads but hate flats. What to do?

I got the same car as you and I replaced my tires with Cooper Lifeliners SLE and I have found them to be great tires for the money. They are more suited for highway driving but I frequently go up to the cottage and take a 17 mile long rough dirt road to the cottage and the tires handle very nice on rough roads. I have even been able to climb steep muddy inclines without any problems while towing 2 jet skis,but thats thanks to the AWD. They handle very good in the rain and they come in a huge range of sizes. I even got a set for my 98 Eagle Talon 215/50 VR17 and they handle 360hp with great confidence. I don't know how much off roading ability you need but since you already got AWD, I am sure these tires will give you good performance off and on road. I have never had a flat, and there is no bruising and I got over 40k on them so its safe to say that the Coopers are very dependable, and often overlooked tire.
